Sauté carrots/peppers, garlic and onions in non stick pan or wok. Push to side of the pan. Add beaten eggs and cook, breaking up with spatula into small pieces. Add noodles, chopped cooked chicken (or tofu or shrimp), half the bean sprouts and cilantro. Pour over sauce and toss all together.
In a small bowl combine rice vinegar, olive oil, fish sauce, and tamarind paste. Mix well and set aside. Heat a wok or large skillet over medium-high heat. Add vegetable oil and garlic and cook for one minute. Add shrimp and cook until the shrimp barely turn pink (about 2 minutes). Do not overcook the shrimp.

Drain the noodles and cut into 6- to 8-inch lengths with kitchen shears. Heat a wok or large nonstick frying pan over medium-high heat until hot. Add 1 tablespoon of the vegetable oil and swirl the wok to coat. Add the shrimp and cook in a single layer until the bottom halves are opaque, about 1 minute.
Once cooked, remove from pan and cut into small cubes. Set aside. In a wok or large skillet, heat oil over medium heat. Add garlic and cook until aromatic. Add cooked Tofu and shrimps and cook until shrimps turn pink/orange, about 3-5 minutes. Move the shrimps and tofu on one side to make room on the skillet.
